NEW PLAN OF PRESERVING FRUITS. 247 as being unnatural and unwholesome articles, either as necessaries or luxuries of life, either imparting, as they all do, injurious elements, or chemically changing or withdrawing the nutritive elements, or at least changing their relative proportions, so as to be unfit for digestion. And with the arrangement described in the next chapter, which is applicable to ships as well as houses, and can be secured from the influence of all climates, the disease of scurvy need never be known, or the many other diseases induced by salt, vinegar, pyroligneous acid, carbonaceous food, or alcohol. Plan for Preserving Fruits anld Vegetables. Professor Nyce, of Cleveland, Ohio, has perfected and patented a plan for preserving fruits, vegetables, &c., which seems to me of great interest and importance, not only as a means of applying practically the principles of science to the useful purposes of life by adding to our luxuries, but, as I have endeavored elsewhere to show, of adding to the supply of elements actually necessary for the preservation of health, and of avoiding the injurious articles now used in preserving food. And as this plan strongly favors my "Philosophy of Eating," and my humble efforts to induce men to return to the primitive use of natural food as the means of enjoying, to the highest degree of which they are capable, the pleasures of health and "the pleasures of the table," I shall transcribe what is known, and already to some extent published, on this subject.
