Quinces Raw: To keep these all the year, Take some of the worst Quinces, and cut them into small pieces, boil them in Water, putting to each Gallon three spoon∣fulls of Salt, and as much Ho∣ney; and so let them boil till the Water becomes very strong of the Quinces, and when it is cold, put in a quart of Whitewine Vinegar, and then put the best Quinces into the Liquor, close them up in an earthen pot, and they will keep fresh all the year, so that
