71. To make conserve of Damsons.

Take ripe Damsons and put them into scalding water, and half an hour after set them over the fire till they break; then strain them through a Cullender, and let them cool therein, then strain them (through a peice of Canvas) from their stones and skins, and then set them over the fire again, then put to them a good quantity of red Wine, and so boil it often stirring it till it be thick, and when it is almost boil de∣nough, put in a convenient proportion of Sugar, and stir it very well together, and then put it into your gally-pots.
